Greek Potato Salad, A Pinch of Healthy

(5 Servings)

Most potato salad recipes call for a hearty helping of mayonnaise to bind

the ingredients together, but this may feel a little heavy on those extra sunny days. This potato salad has a Greek twist and uses a vinaigrette in place of classic mayo to coat the potatoes and add an extra boost of flavor!


  • 12 red potatoes (26 ounces)

  • 1/2 tsp salt

  • 1/4 cup sliced green onions

  • 1/2 cup Greek red wine vinaigrette*


  1. Quarter the potatoes.

  2. Place in a pot of boiling water and bring back to a boil. Add 1/2 tsp salt.

  3. Reduce heat. Cook until tender (about 12 minutes).

  4. Drain and cool.

  5. Stir in dressing and green onions.

  6. Serve at room temperature.

*Greek red wine vinaigrette: Combine the following ingredients in

a jar and shake to combine.

  • 1/4 cup red wine vinegar

  • 1/4 cup water

  • 1/2 cup extra virgin olive oil

  • 1/2 teaspoon garlic powder (or granulated garlic)

  • 1/4 teaspoon oregano

  • 1/4 teaspoon basil

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper
