Greek Potato Salad, A Pinch of Healthy
Most potato salad recipes call for a hearty helping of mayonnaise to bind
the ingredients together, but this may feel a little heavy on those extra sunny days. This potato salad has a Greek twist and uses a vinaigrette in place of classic mayo to coat the potatoes and add an extra boost of flavor!
12 red potatoes (26 ounces)
1/2 tsp salt
1/4 cup sliced green onions
1/2 cup Greek red wine vinaigrette*
Quarter the potatoes.
Place in a pot of boiling water and bring back to a boil. Add 1/2 tsp salt.
Reduce heat. Cook until tender (about 12 minutes).
Drain and cool.
Stir in dressing and green onions.
Serve at room temperature.
*Greek red wine vinaigrette: Combine the following ingredients in
a jar and shake to combine.
1/4 cup red wine vinegar
1/4 cup water
1/2 cup extra virgin olive oil
1/2 teaspoon garlic powder (or granulated garlic)
1/4 teaspoon oregano
1/4 teaspoon basil
1/2 teaspoon salt
1/4 teaspoon pepper
